Today just reached home after my events catering project.Was really tired listening to so many feedback about our platting for appetizer & main course from some of the chef.Basically,now I am doing a big project called "Events Catering".The project comprise of 23 members from both the Diploma in Culinary skills and Diploma in Pastry & Baking.I was elected as a Sous Chef which is the 2nd position in this project.Me and my partner Execitive Chef have a big responsiblity to lead the entire group.Today was actually our dry run 5 doing 12 portions to see the speed of the different individual stations.The worst thing for today was,someone from dont know which course did not close the walk in freezer door,and tat makes all my vegetables "gan na" freezer burn man.....the potato was like freeze until like a stone lor...can't even peel ...hahaa.Any way I will up date my friends to come for my events catering at Hotel for a fine dinning experence.Cheers
